Within is the laboratory of PJ Rigney, boundary-pushing begetter of hand-made spirits who slow distills gin with nature’s finest oriental botanicals and gunpowder tea. In an exciting multi-continental project, this spirit provides pungent aromas of traditional European gin botanicals like coriander with more earthy, subtle flavors as Asian tea. While tasting a rich spirit base provides a balancing sweetness to temper any aggressive botanicals.
Eight botanicals are slowly distilled by hand in the copper pot still. Four additional botanicals are vapor infused.
