This is a Tobalá-agave based Mezcales de Leyenda Puebla from the Mezcales de Leyenda, distilled by 4th generation mezcalero Don Aaron in Puebla, Mexico. The folks behind Mezcales de Leyenda do great work to promote smaller spirit producers, with a lot of care and attention to environmental responsibility and social sustainability, which is awesome.
Mezcales de Leyenda Puebla is a mezcal made for Mezcales de Leyenda using rare tobala agave. These agaves can take more than a decade to be mature, and are normally harvested from the wild, however, this mescal uses sustainably-farmed agave, making certain that the precious plant won’t disappear. It’s distilled in copper pot stills in San Nicolas Huajuapan in Puebla from pit-cooked agave. The result is a fruity and very smoky spirit – the smokiness is almost like the peat smoke you find in Scotch whisky.
This Mezcales de Leyenda Puebla is produced in the Mexican state of Puebla, a recent addition to the recognized area for mezcal production. It is distilled from 100% Tobalá agaves (known in this region as Cenizo). The agaves are cooked in a lava rock lined pit for three days before they are mechanically milled and fermented for a further five days. The mezcal is double-distilled in copper pot-stills by Mezcalero Don Aaron Alba, a 4th generation producer. The agaves are organic and fair trade certified.
A light campfire smoke marries fantastically with dulce de leche and apple cake aromas in this spirit’s fantastic nose. The palate shows more dry and mineral flavors with a blast of sea salt and brined lemon that carry a delicious savory character. The finish has a pleasant spice note and lingering mango fruit flavors. A very complex sipping mezcal.
