The Old Elk recipe includes three quality ingredients – malted barley, rye, and corn. By investing in our bourbon and using four times more malted barley than traditional recipes, the bourbon generates sweet, light components. The malted barley, combined with spicy essence of clove from the rye, and the traditional rich bourbon character from the corn, creates the overall robust taste profile.
Our Slow Cut proofing process enhances the bourbon’s flavors through a patient process where full barrel proof bourbon is cut, then left to rest, and repeated. While traditional proofing takes 24-48 hours, our Slow Cut technique, developed over several test periods, takes significantly longer. This intentional time period allows the flavors to marry between stages, until the exact character is achieved, creating an overall smoother bourbon whiskey.
Tasting Notes of Old Elk Blended Straight Bourbon Whiskey
APPEARANCE: Amber.
AROMA: Sweet vanilla and caramel, clove spice, slight maple, and nutty almond.
TASTE: Maple syrup, almond, raw bran, chocolate, deep wood and coconut.
FINISH: Smooth and coating with a lasting flavor.
