Jeffersons Ocean: Aged At Sea Bourbon
This bourbon started out as an experiment with just three bourbon barrels on Trey’s friend, Chris Fischer of OCEARCH’s ship, in a curious effort to discover what would happen if bourbon was left to weather the extreme elements: temperature fluctuations, salt air and the gentle rocking of the ship and An exciting release from the Jefferson’s range, this bourbon is initially matured on land for the lion’s share of its maturation, before embarking on a sea-faring voyage, crossing the equator 4 times.
After all Begun as an experiment discover what would happen if bourbon was left to weather the extreme elements, Jefferson’s Ocean showcases complex flavors reminiscent of other spirits; the almost black color and caramel flavors resemble a dark rum as the sugars within the barrels caramelized; the briny, savory taste from the barrels breathing the sea air is reminiscent of Islay Scotch and at its core, hence it’s a true bourbon.
Appearance:
Firstly in a glass, Jefferson’s Ocean appears a medium honey brown.
Nose:
Since Jefferson’s sources bourbon and the mash bill is unknown. So, the nose for this particular batch lines up with rye grain recipe bourbon with strong floral notes that balance with salted caramel.
Palate:
Further supporting my suspicion that this particular batch of Jefferson’s Ocean includes mostly rye grain mash bill bourbon, the front of the palate leads off with floral notes, citrus notes, and a light black pepper spice.
