Evening Land Seven Springs is the terroir-driven winemaking project of Sashi Moorman and Raj Parr in the Eola-Amity region of Oregon. The 2017 Summum is sleek and refined but crackles with energy beneath the surface. It is light to medium-bodied, crystalline and mineral, with delicate apple fruit, nutty savouriness and floral lift. There is the lightest whisper of reductive smokiness and saline tang throughout to add yet more to the story.
