Fidencio Mezcal Clasico Is A Traditional Oaxacan Mezcal Made With Agave That Is Roasted In A Stone-Lined Underground Pit. Before The Agave Plants Are Added To The Pit, A Fire Is Set Inside That Is Fueled By Encino, The Local Black Oak Tree. The Fire Heats The Stones To A Blistering Temperature, And After It Subsides, The Agave Piñas Are Piled In And Buried. The Plants Cook For Three Days, Absorbing The Smoke And Expressing Their Full, Spicy, Fruit Flavors As The Heat Breaks Down The Rich Sugars Locked Within The Agave Hearts. After Roasting, They Are Ready To Be Crushed By A Large Grinding Stone Made Of Rose Quartz, Which Is Powered By Horse To Grind The Plants And Release The Sweet Nectar For Fermentation And Distillation. The Agave Plants Are Left In The Pine Vats During The Fermentation Period To Enhance The Powerful Smoky Agave Flavors.
