Svöl Swedish-Style Aquavit share some similarities with their Danish cousins. They are also made from grain-based spirit and are often un-aged, although some are aged for short periods of time (less than 1 year). The main differentiator is that Swedish aquavits tend to lean on slightly sweeter botanicals like dill and fennel in addition to caraway. Our Swedish-Style aquavit features fresh dill which is cold infused before the other botanicals are added, and fennel that’s been cracked and roasted to release its flavor and aroma. The result is a brighter flavor profile that’s perfect in refreshing cocktail experiments.

The brainchild of Gunnar Gíslason, chef and owner of Michelin-starred Dill Restaurant in Reykjavik, and Jonas Andersen, Beverage Manager for MeyersUSA, Svöl Aquavit is made at New York Distilling Co. in Brooklyn, NY. It launched in 2019 with two expressions. The Swedish-Style Aquavit is made by infusing seven botanicals, including caraway, dill, coriander and lemon verbena, in a neutral spirit made from rye, corn and barley.

This Svöl Swedish-Style Aquavit starts off with bright aromas of lemon verbena and dill, with a slight sweetness. On the palate, there’s a strong spice flavor followed by light, but distinct fennel and caraway notes. The palate fades into a licorice-like tingle.
