This Joseph Carr Cabernet Sauvignon is from the Central Coast’s Paso Robles AVA, which has been enjoying a well-deserved explosion in popularity. Located near the Pacific Ocean, Paso Robles boasts the largest diurnal range of any wine region in CA.
Joseph Carr Cabernet Sauvignon swing between daytime and nighttime temperatures – up to 50 degrees Fahrenheit! – is due to cool marine air flowing east through the Templeton Gap and south along the Salinas River from the Monterey Bay. The result is Cabernet Sauvignon with rich fruit, full bodies, and silky tannins, but with a firm acid backbone.
Toffee, cherry, mint, fig, violets and chocolate in the nose, medium bodied attack with raspberry, cherry and roasted meats finishes with great length with roasted meats, chocolate and candied violets.
Compelling aromas built up upon ripe cherry, rich pomegranate juice, and fresh maple syrup lift from the glass. Lively fruit on the palate, expressive of ripe raspberry, fresh fig, and succulent plum and framed by cola spice and burnt butter cookies. The finish is soft and lingering.
Lively aromas lift from the glass and are highlighted with handfuls of black cherry, licorice, burnt caramel and vanilla. On the palate, this Cabernet is fresh and polished and illuminates layers of ripe fruit and comforting spice. Ripe flavors of black cherry and cassis are complimented by warm pie crust and drift into a lingering flavor of preserved fruit.
A medium-bodied, well-balanced Cabernet with scents of ripe black currant, smoke and saddle. Flavors include dark cherry and ripe plum with a hint of vanilla and cocoa dust. Firm, but approachable tannin structure accents a balanced and long finish.
