Named for the village where Castell d’Encus is located, Thalarn is a cuvée made from Syrah planted at 1000 meters in elevation on rocky, clay limestone. It is fermented in 12th century stone lagars located (and newly restored) on the property as well as stainless steel tanks and oak vats. After maceration and fermentation it is racked into new French oak barrels for 18 months of aging before bottling.
