Writers Tears Double Oak marries both single malt and single pot still whiskeys after a triple distillation, and is aged in both American oak from Kentucky and French oak Cognac casks from the French Allary Cooperage – the delicious result of a collaboration between the Walsh family and the Legaret family in Cognac, France.
Walsh Whiskey set out to rediscover real Irish-style Whiskey as it was made 200 years ago. When Welsh Whiskey first started in 1999, they contracted their distilling to Bushmills. But their success has allowed them to build out their own distillery in Carlow — in the heart of Ireland’s southern farm country — where they make eight versions of The Irishman Whiskies, six Writer’s Tears blends, and two varieties of Irish Cream Liqueur.
Nose:
Spiced and stewed orchard fruits, lots of sweet and earthy vanilla pod with a side of pear crumble.
Palate:
Juicy white stone fruits, lychee and lemon peel with a hint of grape skin dryness.
Finish:
Rich and aromatic spiced dark chocolate.
