Nose: Sponge cake topped with buttercream icing, chocolate chip cookies, a whiff of savoury oak.

In late June, Vermont-based WhistlePig Old World whiskey came out with 12 Year Old WhistlePig Old World whiskey Old World. This whiskey is the final result of an experiment beginning in spring 2014, during which WhistlePig finished a 12-year-old-rye whiskey distilled in Indiana in former Sauternes, Madeira and Port barrels. Each one of these were first released as limited edition, single cask type expressions, and what’s in bottle here is a marriage of those three.
Rye inspired by Old World barrel-aging traditions. This WhistlePig Old World whiskey 86-proof 12 year-old Rye Whiskey is a marriage of whiskeys aged in New American Oak and ingeniously finished in Port (7%,) French Sauternes (30%,) and Madeira casks (63%). We’ve taken the elements that are most quintessential in an American rye – boldness and character – and fused them with the elegance and grace of an 18 year old Scotch. Aromas or caramel, vanilla, and winter fruit. Rye spice, apricots, plums, raisins, dates, and honey on the palate. Dark chocolate, winter fruit, caramel, and vanilla on the finish.
