The mash bill for Whip Saw Rye Whiskey is 76% rye, 21% corn, 3% malted barley, distilled in a Vendome column still. Then the spirits are brought to Napa, California, to the Bin to Bottle Winery, where they rest an additional one-and-a-half to three years in what they call “experienced” French oak barrels, which means used wine barrels in this case, though “used” sounds less illustrious.

They cut with artisanal spring water from Moon Mountain in Sonoma, which is actually the western slopes of the Mayacamas Range, which separates Napa from Sonoma. The Whip Saw Rye Whiskey is then cold filtered at 29 degrees. But it is the aging and added maturity of the wine barrels that smooths this out, refining the rye, creating a more soft entry, making it already mellow.

Extraordinary deep amber color. Aromas of a beautiful vanilla crème brulée, spiced candied fruit-cake, bergamot, banana, earth, wood-smoke with a hint of black truffle. Decadent, complex flavors of citrus, caramel, and butterscotch, layered baking spices with a touch of ginger with a silky-smooth lingering spice finish. Delicious in a cocktail. Whip Saw Rye needs nothing.

Appearance:

A greenish-brown. Think lightly tarnished copper. At first, I thought I was seeing it because the label is green, but looking at the whiskey, in a glass, on a white background—it was still a little goldish green.

Nose:

Fruity. Ripe Bing cherries. And caramel, but caramel inside a candy bar. Not hot caramel, or caramel on its own.  If you’ve ever been weird enough to smell a Snickers bar before you bite into it, it’s sort of like that. But on the whole, nothing overwhelming. It’s quite mellow and pleasant.

Palate:

The whiskey and the wine do not compete. It’s a subtle symbiosis. This has definitely got wine in its provenance; if you weren’t tipped off that there was wine in its past, you might have guessed. There’s nothing acidic. It’s not the chewiest of ryes, but that’s fine. The corn and the wine bring the mellow.
