Jefferson’s Straight Rye Whiskey Cognac Cask Finish offering is their Straight Rye Whiskey, finished in cognac casks. This is a marriage between spicy American Rye and refined cognac. While rye whiskey is typically more one-dimensional, the cognac finish adds the more than welcome complexity of character. In Trey Zoeller’s words: “I wanted to look at rye through a new lens and elevate it past the supporting role it’s commonly associated with.” It’s double-barreled for somewhere between 9 and 19 months and bottled at a pleasant 94 proof. An exquisite showcase of Jefferson’s famous innovative maturation methods.
Founded in 1997, Jefferson’s is the brainchild of Trey Zoeller and his father Chet, a famed bourbon historian. They were continuing a family tradition that goes back to Trey’s 8th generation grandmother who was arrested in 1799 for the “production and sales of spirituous liquors.” To personify the brand, they chose Thomas Jefferson—known for his curiosity and experimental spirit. This is a mindset to which Trey has dedicated himself, pushing the boundaries of the definition of bourbon.
