This Ferrari-Carano Cabernet Sauvignon wine is composed primarily of Cabernet Sauvignon blended with a small amount of Syrah. The grapes are hand-harvested, sorted and destemmed. Whole berries are gently fed into tanks for three days of cold soaking before fermentation.
Deep ruby, the 2016 Cabernet Sauvignon opens with crème de cassis, cedar, pencil shavings and eucalyptus with nuances of cast iron, black plum and black cherry plus sweet spice hints. Medium to full-bodied, it has a good core of ripe fruits with a chalky frame and juicy freshness, finishing with oak spices.
This Ferrari-Carano Cabernet Sauvignon comes from mountain-grown fruit in Alexander Valley. Vibrant aromatics of cassis, mocha, dried cherries, mint, cola and smoky leather awaken the senses, while full-bodied flavors of black cherries and plums generously fill the palate. Supple tannins and lingering notes of toasty caramel round out the finish.
Tightly wound tannin and generous oak support up-front blackberry and cocoa powder in this full-bodied, powerful wine. Aged in a mix of French and Eastern European oak, much of it older, it is soft, supple and accessible.
