Mexican corn. Abasolo El Whisky de México is crafted and distilled from non-GMO, Cacahuazintle (ka-ka- wa-sin-‘tɬe) corn cultivated over generations by local farmers for its distinct, extraordinary flavor. More than 7,000 years ago, corn (mahiz) was developed by the indigenous people of México. More than just a crop, corn is the cultural foundation and historical identity of the country.

Cooking technique. Through our unique use of NIXTAMALIZATION—a 4000-year-old cooking technique—the deepest notes of these ancestral ingredients are uncovered. There is no whisky in the world with a process or taste profile like Abasolo.

First Mexican whisky distillery. We couldn’t create The Whisky of México without building the first true whisky distillery in México. Destilería y Bodega Abasolo honors México’s culture of corn through our obsessive, innovative production of farm-to-bottle spirits. Every drop of Abasolo Whisky is produced and aged right here in Jilotepec de Abasolo, México.

Barrel aging. Matured in new toasted and used oak casks in an open warehouse with a light roof and no walls where temperature fluctuations and changing conditions bring a unique aging profile.

All the way from Mexico comes Abasolo, an excellent corn whisky made using 100% Mexican Cacahuazintle corn! Interestingly, a portion of the corn goes through nixtamalization, an ancient cooking technique, while another portion is malted. During the mashing process, the nixtamalized is combined with the malted corn, and then allowed a long fermentation of over 120 hours. It’s then double distilled in copper stills, and set aside to age in new and old casks. Abasolo EL Whisky De México is An impressive whisky, suitable for sipping neat or for using in cocktails.

Nose:

Softly vanilla-forward, with hints of popcorn underneath, followed by juicy peach and pear.

Palate:

Cinnamon sweeties, toasted cedar, another helping of buttery popcorn and a hint of brown sugar.

Finish:

Fruity notes appear again on the finish, plus a kick of white pepper.
